Our Story

Discover the story

The restaurant and café, located at the western end of the city, was established by Ilaria Paiella and Matteo Paoletti Teodori in 2010. Both Italian natives, they spent a large portion of their lives in the hospitality business before separately moving to Australia. Ilaria’s family has owned the legendary wine shop and restaurant ENOTECA CORSI in the heart of Rome since 1960, while Matteo specialised as Master Chef in San Benedetto del Tronto.

Chef Matteo Paoletti Teodori brings his
Italian training and heritage to all aspects of his cooking. He has worked in many restaurants from Italy to Australia starting with the very sophisticated and demanding flair of IL SARAGHINO.

She developed her passion for wine working since very young in her family business in Italy. From her father and academic education she learnt how to advise clients and pair wine with recipes. This experience allowed her to become one of the most genuine and original ambassadors of the traditional Italian varieties in Melbourne.

From Rome with love

Head Chef Matteo makes daily fresh pastas, gnocchi, pizza and bakery products.
He aslo produces his own salami and preserves.
In fact, the menu is completely homemade, infused with a love for genuine Italian flavours and an appreciation for eating well.
Bread and pizza dough are made according a sophisticated slow raising method that takes 72 hours to complete in order to guarantee the best taste, natural softness and digestibility.

Pinsa DOC

We pride ourselves to be the first and only one in Melbourne making the Pinsa Romana, a pizza dating back to ancient Roman times.

Back then, the peasants who lived in the countryside of Rome worked a dough from water, cereals, salt and herbs and then molded it into a flat, oval bread  to be cooked on hot coals and a stone.

We are the only one making the Roman street food known in Melbourne as Trapz which is a focaccia pocket stuffed with daily changing fillings, ranging from meatballs in Napoli sauce to more exotic flavours - slow cooked tripe, stewed oxtail, or even tongue with salsa verde. Diners can eat on-the-go or stay a while with a glass of wine or beer.

Ilaria, Manuela and Claudia Paiella grew up in the hospitality environment. 
They love the most traditional Italian food and wine.
They share the passion to instil this love in others.
And they do it bridging one side of the world to the other!
